montebore 2The history of this rare cheese dates back to the 1400’s. Oringinally produced in the Curone and Borbera valleys in Piedmont, this cheese was destined to disappear following the War and the depopulation of the countryside. This tradition was saved in 1999 thanks to the Slow Food movement. Three levels of decreasing diameter give this cheese its  distincitve wedding cake form. During maturation the delicate aromas of milk evolve to the more complex and intense aromas of the aged product.
