Castelmagno 2The Castelmagno is a prized cheese with Protected Designation of Origin, from Piedmont. It is produced according to a strict specification, in a very small area in the Valle Grana, in the Province of Cuneo. The fresh paste has a crumbly structure that becomes more compact with age. The cheese has a fine, delicate, and slightly salty flavor which transforms and is enriched with maturation. It is a true gastronomic delight.

TaleggioTaleggio is an Italian cow’s milk cheese with P.D.O. and is aged at least 45 days. During ageing the rind is washed to avoid the development of anomalous moulds and to support the formation of the classical brick-red rind. Near the surface the paste is creamy, while the centre has a more compact and crumbly structure.
