Cheese with Protected Designation of Origin (P.D.O.)

Designation of origin: the name of a region, a specific place or, in exceptional cases, a country used to describe an agricultural product or a foodstuff – originating in that region, a specific place or country, and – the quality or characteristics of which are essentially or exclusively due to the geographical environment including natural and human factors, and the production, processing and preparation take place in the defined geographical area. “

The European system of “protected designation of origin” P.D.O., and “protected geographical indication” P.G.I., were born in 1992. The purpose being to coordinate and integrate existing standards of protection for agricultural and food products in some EU countries.

TaleggioThe protected designation of origin, is thus a brand of legal protection of the name which is given by the European Union to foods whose peculiar characteristics depend essentially or exclusively on the territory in which they were produced.

In Italy there are 45 cheeses (not including two types of ricotta) with Protected Designation of Origin. Six are exclusively produced in Piedmont including: Toma Piemontese, Robiola of Roccaverano, Raschera, Murazzano, Castelmagno, and Bra.

All stages of product processing must comply with strict production criteria and registered with EU competent bodies. It is a set of rules that govern: the feeding of the animals that provide milk, the specific standards of production and ageing, the product labeling and logos. This ensures a high level of product quality and the product’s traditional characteristics.
