Robiola produced with a blend of cow, goat and sheep’s milk, with a delicate and unmistakable flavour. The surface has a soft and wrinkled crust, ivory white to a straw yellow, intensifying with ripening. The interior has a soft, creamy paste while closer to the exterior it takes on an ivory white color, and it is compact and without holes. The union of the three types of milk give this cheese a characteristic and rich taste.
